My friend and I made cookies last week. We didn't make any old cookies- we made Chocolate Peanut Butter Whoopie Pies (insert gasp!) that we found the recipe for (By Jennifer O'Connor) in a magazine. They turned out to be A.M.A.Z.I.N.G. Make them! (and tell me about it if you do.)
Ingredients:
1 12-oz pkg. miniature semisweet chocolate pieces
2 Tbsp. milk
3/4 cup butter, softened
1/4 cup creamy peanut butter
1 and 1/2 cups sugar
1 tsp. baking soda
1 tsp. baking powder
2 eggs
1/2 cup milk
1 tsp. vanilla
1/2 cup unsweetened cocoa powder
3 cups all-purpose flour
Preheat oven to 350F. *Set aside 1/4 cup chocolate pieces to sprinkle on cookies. In microwave-safe bowl combine 1 cup of the chocolate pieces and 2 tablespoons milk. Microwave on 50% power (medium-VERY IMPORTANT) 1 minute or until melted; stir once. Set aside.

In bowl, beat butter and peanut butter with electric mixer until combined. Add sugar, soda, baking powder, and 1/2 teaspoon salt, beat to combine. Add eggs, 1/2 cup milk, vanilla, and melted chocolate; beat until combined. Beat in coca powder and flour until combined. Stir in
remaining chocolate pieces. (NOT the 1/4 you set aside. Stir in whatever is left in the bag.)
Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheets. *Sprinkle with reserved chocolate pieces before baking. (the 1/4 cup of chocolate pieces you set aside in the beginning)
Bake 9 minutes or until tops are set.
While your cookies are baking, start mixing up the filling.
Filling: In bowl, beat 1 cup softened butter, 1 cup creamy peanut butter, 1 cup marshmallow creme, and 2 cups powdered sugar with electric mixer until combined. If needed, beat in 2 tablespoons milk until spreading consistency.
After the cookies are done baking, cool on sheets,
and transfer to wire racks- cool completely.
To assemble, spread the filling on one flat side of a cookie.
Choose another cookie the same size, and press together.
Makes 30 sandwiches. YUMMM! Enjoy, and let me know if you try it! (The cookies look big in the pictures. However, we actually made them small because in the end, you put 2 cookies together to make 1 whoopie pie.) Also, we ended up with a fair amount of extra filling. To use up the extra filling, I have been warming some up in the microwave and dipping a banana or apple slices in it. Super good.
